Since croissant means crescent...and these aren't....then these are actually just called Cubes. The French for cube is...cube.

My guess is they were made to look like cubed croissants, and their resemblance to wood is merely coincidental.
My favorite part of pastry bread is the browned, flaky caramelized part, so I think I would really like those even more...
