It is a lot more common than it should be. I have the habit of throwing the bananas down in tricky corners but NPC's have a different driving style and tend to take corners wider. So I always end up screwing myself.

It's because you throw bananas down on your driving path. So the most likely one to hit it is you.
Tbh this is a pretty sound strategy if you're playing with other people. If they're far ahead and you're not getting good items, just drop bananas on tight corners so they'll hit them on the next go-around.
